I am making a fruit cake wedding cake and the bride dosent want mazipan under the icing. I'm not too keen on two layers of fondant and I was wondering about using royal icing as a undercoat. So use it like I would use ganache to get a smooth even surface to put the fondant on top of. Has anyone here done that?

Hi everyone,
I know that I have seen a thread talking at length about the homemade bake even strips, I have searched for it and can't find it.

Could anyone help me find it? I checked faq too.

I want to use bake even strips on a bowl shaped cake and the proper ones aren't the right size for it.
Is it wet paper towel inside foil that I use? Any particular thickness or how wet should I make them?
Are these what I need to make the sides of my mud and buttercakes not so hard?
Also, does anyone use a simple syrup on their vanilla buttercakes?
I have been thinking of trying it and wondering if there is a nice vanilla flavoured one I could make up.
Would the cake keep long enough with a syrup or will it affect how long it will keep?
THanks!Guests cannot see images in the messages. Please register by clicking here to see images.
